Sicilian Watermelon Pudding
INGREDIENTS:
• Watermelon Seedless preferred, it’s easier.
• Arrowroot Starch
• Coconut Sugar
• Vanilla Extract + Lime Juice
• Whipped Coconut Cream + Mint Leaves
Step 01: Blend the watermelon then strain out the pulp.
Step 02: Combine watermelon juice with arrowroot, coconut sugar, vanilla, and lime juice.
Step 03: Bring mixture to a boil and allow to thicken
Step 04: Allow to cool and pour into small dessert bowls.
Step 05: Allow to set in fridge.
Step 06: Serve chilled with toppings of choice, we like the coconut cream and mint!
You can store in fridge for 2-3 days! Make a bulk batch for summer outings. 😊
